Ndolé

Cameroon's national dish: bitterleaf simmered with ground peanuts, smoked fish and meat, usually served with plantains or rice.

Preparation

  1. 1Boil the bitterleaf to remove some of its bitterness, then chop it.
  2. 2Grind or blend the peanuts into a paste.
  3. 3Brown the meat and smoked fish, then stir in the peanut paste with a little water.
  4. 4Add the bitterleaf and simmer gently until the stew thickens.
  5. 5Serve hot with fried ripe plantains or white rice.
