Littoral, Cameroon
Cameroon's national dish: bitterleaf simmered with ground peanuts, smoked fish and meat, usually served with plantains or rice.
Preparation
- 1Boil the bitterleaf to remove some of its bitterness, then chop it.
- 2Grind or blend the peanuts into a paste.
- 3Brown the meat and smoked fish, then stir in the peanut paste with a little water.
- 4Add the bitterleaf and simmer gently until the stew thickens.
- 5Serve hot with fried ripe plantains or white rice.
